I plan meals for 3 weeks at a time and do a huge shopping trip for everything. This saves time and money!
I like to cook a lot of rice at once and store it in the freezer. I put one serving of cooked hot rice in a zip top bag and freeze it. When I need the rice quick i just take it out and microwave it for a minute, then it’s hot and ready!
Place frozen chicken breasts in a crock pot with your favorite jar of salsa (or 2 depending on the amount of chicken). Then at dinner time warm tortillas, prepare any toppings you want, shred your chicken and serve!

Buy meat in bulk. Separate into sizes for meals and freeze in separate bags.
If you know that you are going to have a crazy week, plan to make a few things that freeze well (like spaghetti sauce or enchilada casserole) and make them ahead of time.
