Taco Soup

  • 1/2 lb ground beef, browned
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1 can kidney beans, with juice (15 oz)
  • 1 can diced tomatoes (28 oz)
  • 1 can corn, with juice (15 oz)
  • 4 T. salsa
  • 1/2 pkg. Taco seasoning
  • 1 t. salt

Brown meat in dutch oven and drain. Add remaining ingredients. Simmer 20 minutes. Soup will be thick – add more water if desired. Top each serving with a dollop of sour cream, grated cheese, and taco chips. The thick soup can also be used to fill burritos.
