Enchilada Casserole

corn tortillas                                                                                                                              colby jack cheese (whole block)                                                                                                        1 can sliced olives                                                                                                                        half an onion (diced)                                                                                                                       2 cans (28 oz and 16 oz) Enchilada sauce (green or red)                                                         Optional: sour cream, hot sauce, salsa

Preheat oven to 350 degrees and spray a 9X13 pan. Layer first with corn tortillas and then add all the other ingredients with a layer of sauce last. Repeat until the pan is full. Don’t top with tortillas. Add one last layer of cheese on top. cover and bake 30-35 minutes, then uncovered for an extra 5 minutes
