3 Italian sausages (You can get these in bulk at Wegmans’ and freeze what you don’t use) 1 large red pepper, cut into slices 1 large onion, cut into slices 3 medium potatoes, diced into medium chunks
Saute the Italian sausages in about 1 T. olive oil. Brown on each side. Take the sausages our of the saute pan, put in the veggies. Saute the veggies on medium low heat fora bout 10 minutes, or until the onion is soft. Slice up the sausages, about 4 pieces per sausage and add to the veggies. On low heat, cook until the potatoes are soft, abut 30 minutes. During this time, if the veggies start to stick to the pan, just add a bit more olive oil. You can serve this over rice or just plain.
