Chicken and Mexican Rice

1-2 lb. of chicken                                                                                                                            1 can Ro*Tel diced tomatoes (original-green chilies…)                                                                       1 can black beans                                                                                                                           1 can kidney beans                                                                                                                          1 onion (chopped)                                                                                                                      Rice, cooked

Cook rice per instructions. Fry chicken with salt and pepper – slice chicken in half or thirds (chicken will cook quicker when it is not so thick). Rice and chicken should both take about 15-20 minutes to cook. Mix  Ro*Tel, beans, onions and rice and put chicken on top.
