1-2 lb. beef, chicken or turkey (chunk or ground) 1 15 oz. can black beans (drained and rinsed) 1 15 oz. can corn (drained) 1 14 oz. can Green chiles (use more or less as desired) 1 10-16 oz. jar salsa 1 small onion (finely chopped) 1 tsp. Garlic (can use garlic powder) 1 tsp. Cumin Optional: cheese, sour cream, green onions, etc.
Brown meat and onion in skillet. Place all ingredients in crock pot – cook 4 to 6 hours until meat is cooked and mix is at the desired consistency. Serve in tortillas, or with rice, or with pasta and salad.
This is very versatile – you can use more or less of any ingredients, or add whatever else you like. This works with what you have on hand.
